Ingredients (Yields 4.8 L / 1.27 gal):
Avocado pulp: 1 kg (2.2 lb)
Sweetened condensed milk: 397 g (14 oz)
Sensatika Avocado Flavoring: 15 ml (0.51 fl oz)
Essential Mix: 1.63 kg (3.59 lb)
Warm water: 2.66 L (0.7 gal)
Lime green food coloring: as needed to adjust color
Directions
Prepare the base: Mix the Essential Mix with warm water using a hand or electric whisk until fully dissolved and smooth. This is your liquid base for ice cream/paletas.
Blend: In a blender, combine the avocado pulp with the condensed milk and a small amount of the prepared base.
Combine: Pour the avocado mixture into the rest of the base. Add the Sensatika avocado flavoring and adjust the color with a few drops of lime green coloring. Mix well until the color and texture are uniform.
Mold & freeze: Pour the mixture into popsicle molds, insert sticks, and place in a paleta machine or freezer.
Freeze at -15 to -20 °C (5 to -4 °F)
