Ice pops can develop various defects that affect their appearance, texture, flavor, and stability. Understanding their causes makes it easier to identify issues during formulation, production, or freezing and apply solutions to achieve a higher-quality product.



Why Do Ice Pops Develop Those “Grainy” Spots?


1. Sugar Crystallization (Recrystallization)

If the syrup is not properly dissolved or balanced, the sugar can separate and form visible crystals during freezing. This is more likely to happen when using only white sugar, without other solids to help stabilize the mixture.

2. Large Ice Crystals

If the mixture contains too little sugar or soluble solids, or if freezing occurs slowly, large water crystals can form. These crystals can give the ice pop a grainy or rough texture when eaten.

3. Destabilization Due to Temperature Changes

If the ice pops partially thaw and then freeze again—for example, in frequently opened freezers or during transportation—large ice crystals may develop.


How to Prevent the Formation of “Grainy” Crystals

  • Ensure proper sugar dissolution: Boil or heat the water with the sugar to ensure it dissolves completely. This can vary depending on the climate and relative humidity, so the process may not behave the same way in every location. It is important to consider the conditions in your area.

  • Freeze quickly: The faster the ice pops freeze, the smaller the ice crystals will be. A temperature of -20°C to -25°C (approximately -4°F to -13°F) is recommended.

  • Avoid partial thawing: Maintain an uninterrupted cold chain to prevent the ice pops from partially thawing and refreezing.

  • Use the appropriate stabilizer: Use the correct dosage to improve texture. Depending on your formulation, you may use a stabilizer for water-based or milk-based ice pops and/or CMC. Choose the option that best suits your formula.

  • Control the pH: A very acidic mixture may contribute to crystallization. Ideally, the pH should be between 3.5 and 4.5. This is why recipes should be formulated according to each fruit and/or flavor, since not all formulations require the same amounts of sugar and/or acid.


Temperature Control Recommendations


The key is to maintain the cold chain at all times throughout manufacturing, storage, transportation, and the point of sale. Any partial thawing can:

  • Damage the texture.

  • Promote the formation of large ice crystals.

  • Cause visible frost.

  • Cause the ice pops to stick together.

For frozen storage, a temperature of -18°C or lower (0°F or below) is recommended. Temperature stability should be maintained, while avoiding frost buildup and partial thawing.

During transportation, the cold chain should be maintained at approximately -18°C to -20°C (0°F to -4°F).

For serving and display, freezer display cases should be kept between -14°C and -18°C (7°F to 0°F). This temperature range is sufficient to keep the ice pop firm without making it excessively hard.

For carts or mobile points of sale, temperatures between -10°C and -18°C (14°F to 0°F) are recommended, ideally using dry ice or a portable freezer. Because temperature fluctuations are more likely in these conditions, constant monitoring is recommended.

If the temperature rises above -10°C (14°F), the ice pops may soften and develop ice crystals or frost as a result of refreezing.


The Importance of Proper Packaging


Using appropriate packaging is also essential to protect ice pops from freezer burn, also known as cold burn or freezer burn. Here's how and why proper packaging helps:

Freezer burn is a condition caused by surface dehydration of frozen products when they are exposed to the cold, dry air inside a freezer. In ice pops, it can appear as:

  • Dry white or gray spots on the surface.

  • A rough or sandy texture.

  • Loss of flavor or aroma.

  • Ice crystals or frost forming inside the packaging.


Proper packaging helps reduce contact with dry air and prevents surface dehydration. A hermetic seal also helps prevent air from entering the package and reduces the formation of ice crystals.

It is recommended to use low-permeability packaging and insulating materials, such as high-quality polyethylene, paperboard/poly-paper, or metallized materials. These materials help minimize the exchange of gases and water vapor and, when opaque or metallized, provide protection against light. This can help reduce the degradation of color and flavor.
