Essential Mix: The Powdered Base for Premium-Texture Ice Creams and Paletas
Discover how a simple preparation can help you achieve ice creams and popsicles with excellent body, creaminess, a smooth, uniform texture, and consistent results.

Essential Mix is a premium powdered base for ice cream, shelf-stable at room temperature and developed to deliver a balanced sensory profile with excellent body, creaminess, and a smooth, uniform texture. Its formulation, which contains dairy solids, provides consistent and reliable performance across a variety of applications, including hard ice cream, soft serve, popsicles, aguas frescas, and other creamy preparations.
Preparation is simple and efficient: simply add water and allow the mixture to rest for 10 minutes before use. This step promotes proper hydration of the functional ingredients, helping ensure optimal, repeatable, and high-quality results in both professional processes and smaller-scale production.
When the mixture is prepared with whole milk and dairy cream, the final product achieves a premium profile, characterized by a higher milk fat content, a creamier texture, and a denser body. This formulation reduces air incorporation (overrun), improves system stability, and enhances the overall sensory experience, providing greater smoothness, improved flavor release, and more controlled melting. The result is high-quality ice cream and popsicles with consistent performance and professional results.

Hard Ice Cream: A frozen product with a firm and stable structure, designed to be stored and served at low temperatures. It offers a balance of body, creaminess, and melt resistance, with moderate air incorporation. Typical overrun: 40–60%; serving temperature: –14 to –18 °C (7 to 0 °F).
Gelato: An Italian-style frozen product characterized by lower air incorporation and a higher solids content, resulting in a denser, more elastic, and creamier texture. It is served at a slightly higher temperature than hard ice cream, enhancing flavor perception. Typical overrun: 20–35%; serving temperature: –10 to –12 °C (14 to 10 °F).
Rolled Ice Cream: Ice cream prepared on a frozen plate, where the mixture freezes rapidly and is manually rolled. It has a compact structure, with virtually no air incorporation, and a texture that is smooth yet firm. Typical overrun: 0–10%; immediate serving temperature: –5 to –8 °C (23 to 18 °F).
Popsicles: An individually molded frozen product with a compact and stable structure, designed to be consumed directly from the freezer. It can be made in creamy or water-based versions, depending on the formulation. Typical overrun: 0–20%; serving temperature: –18 to –22 °C (0 to –8 °F).
Soft Serve Ice Cream: Served directly from the machine at a higher temperature than hard ice cream. It is characterized by a light, aerated, and smooth texture, with a high perception of volume. Typical overrun: 50–100%; serving temperature: –6 to –8 °C (21 to 18 °F).
Premium Ice Cream (10%+ Milk Fat): Ice cream formulated with whole milk and dairy cream, characterized by a high milk fat and total solids content. It offers a denser, creamier texture and a superior sensory profile. Typical overrun: 25–45%; serving temperature: –12 to –14 °C (10 to 7 °F).
Creamy Aguas Frescas: A cold beverage with a light and homogeneous texture, prepared from a hydrated creamy base and designed to provide balanced flavor, smooth body, and a refreshing sensation. Unlike ice cream, it is not frozen or churned with air incorporation. Typical overrun: 0%; serving temperature: 2 to 6 °C (36 to 43 °F).
